I was actually precautious enough to cast my teleport spell after the first hit, because I had had this happen with Ogres before. Just now my 40 hp stalker naga got killed by an Ogre in two hits. In Nethack the answer was always to pray, but in this game I don't even get a god until later. I don't know of any recourse available to me. Time and time again, I find myself standing next to some random orc in full health, hacking away, and then after a series of bad rolls I get a low hitpoints warning while the orc is fine, and at this point I either have a heal potion/ teleport scroll or I'm dead. I think my chief problem is that there's so few options available for survival in the early game.
